Flip Flop Cupcakes
I’m taking a break from my number one obsession (flip flops, hello!) to make a confession: out of the blue, I have become obsessed with cake balls. This may be due to the fact that my local Whole Foods sells the best (really, the best!) cake balls. One tiny problem: they are expensive. These bite size wonders are absolutely delicious but at over $2 a bite-size pop, my bank account is shrinking rapidly. So, onto the internet I went in search of cake ball recipes. I found what appears to be a good one at AllRecipes.com. The cake is in the oven as I type, so I will be sure to let you know how my cake balls turn out.
While searching cake balls recipes, I came across pictures of two of the cutest desserts ever: flip-flop cupcakes and cake balls decorated with shoes on top. This led to a fruitless search for cake balls topped with mini flip-flops, but I still hold out hope that some creative cook will have success with the idea. Alas, it will be not be me. I’m about as basic of a cook as they come.
The flip-flop cupcakes look fairly easy to create. Your favorite flavor boxed cake mix, vanilla frosting, and then either toasted coconut or finely chopped nuts to create the sand. Fondant flip-flops if you are so inclined, but I’m thinking you can also use any type of chilled sweet: roll out Dots or red licorice, maybe. Then use another color Dot or black licorice for the straps. Just a thought. Hmm, maybe I should try this for my cake balls!
Add a beachball (giant gumball) and a tropical (drink) umbrella and you are done!
Finally, I had to include a picture of the high-heel adorned cake balls. They are just too cute!
